Muffins aux Zucchini

Heat oven at 350 F

1.5 cups of white flour ( wheat flour)

1/2 cup of coconut flour

1/2 cup maple syrup

1 tsp of baking soda

1.5 tsp of baking powder

1/2 cup of canola or vegetable oil

1/4 cup of heavy cream  (or regular 3.25% milk)

1.5 tsp of cinnamon powder (optional)

1.5 tsp of vanilla 

1/2 tsp of sea salt 

2 eggs

1 tablespoon of flaxseed meal (optional)

1 cup of grated zucchini about 1 medium zucchini (make sure its well packed in that 1 cup by pressing a bit)


Mix solid powders together, add oil, eggs and heavy cream and mix. Add in a 8 by 4 pan using parchment instead of greasing. Cook for 50 min until golden brown on top.  Let rest 30 min prior to serving. Moist and delicious!!!
