Chipotle and Orange Slow-cooked Lamb Shoulder
We present to you a recipe for baked lamb shoulder using a combination of flavors inspired by South America. The lamb is slowly cooked in the oven to preserve the juices and obtain a very tender meat.
Tips for making a delicious chipotle and orange lamb shoulder:
The marinade should be salty to taste (not overly salty).
The cooking time will vary depending on the size of the lamb shoulder ( for 2 kg, about 3 to 4 hours total).
Cook covered to slow cook the lamb (and preserve moisture). Then, cook it uncovered to roast it (to give it a nice color).
Serve and decorate with slices of orange and parsley.
Ingredients to make the chipotle and orange lamb shoulder
Chipotle: For a smoky and spicy flavor profile. We used canned chipotle. Add more chipotle peppers and juice for a spicier meal. We only used one for dinner to be kids-friendly. However, use 2 to 3 peppers and some of the liquid if spiciness is of no concern.
Orange: Aromatic and sweet to complement chipotle's smokiness.
Mustard and vinegar: Helps the marinade penetrate the meat and counterbalance the sweetness from the orange and maple syrup.
Onion, garlic, parsley, bay leaves, coriander: To add flavor and aromas.
How to make chipotle and orange lamb shoulder?
Prepare the marinade: Blend garlic, onion, parsley, bay leaves, coriander, mustard, balsamic vinegar, chipotle, orange, and salt (to taste).
Marinade and massage the meat: Make incisions on the shoulder and rub the lamb with the marinade. Cover all surfaces and inside the incisions.
Cook the lamb shoulder: Cook covered until tender and then roast.
Garnish with oranges and parsley.
