Double Cream

Easy and delicious cream to accompany your fruits and desserts. The addition of sour cream or mascarpone cheese, contribute to making this garniture richer.

Ingredients

• 1 + 1/3 cup heavy cream (whipping cream)
• 1/3 cup of sour cream, mascarpone cheese or crème fraiche
• 2 tbsp of sugar
• 1 tsp of vanilla or almond extract 

Instructions

1. Add all ingredients into a bowl (whisk feature). Using a stand or hand mixer, mix all ingredients at medium high speed for a few minutes. Stop when you get stiff peaks, and do not overmix or the cream will curdle. 

Notes:

Using sugar allows for an airy light cream. If using maple syrup instead of sugar, this process will be more challenging.
