Easy Country Cream

Country cream is a delicious, slightly tangy alternative to whipped cream that perfectly pairs with fresh fruits and berries in particular.

We love pairing country cream with cake and berries.

Easy Country Cream

Ingredients

• 1/2 cup of plain full-fat or Greek yogurt
• 1/2 cup of sour cream
• 1/2 cup of mascarpone cheese
• 1/4 cup of sugar*
• 1/2 tsp of vanilla extract
• ice cubes

Instructions

1. Prepare country cream taking care to keep the ingredients and the cream cold.
2. Add ice cubes and a bit of water to fill the bottom of a large bowl.
3. Add yogurt, sour cream, and mascarpone cheese to a smaller bowl and place on top of the ice cubes.
4. Mix yogurt, sour cream, and mascarpone cheese until smooth using a whisk.
5. Add 2 tbsp if sugar at a time and more sugar to taste. Gently incorporate sugar and vanilla into the cream.
6. Immediately store or refrigerate. Store for up to 2 days in the fridge.

Notes

If using yogurt containing added sugar, you may not need to add sugar. Add 1 tbsp of sugar at a time.
