How to make savory plantain beignets (klako,Klaklo, krako)?
1. Gather and prepare your (plantains, onion, flour, salt, and pepper). Finely chop half of an onion. Plantains or alloco used in this recipe should be ripe to facilitate the mashing process and enhance the sweet vs. savory contrast characteristic of this recipe. Mash the plantains with your hands or a fork (it is easier to use your clean hand).
2. Combine all the ingredients.
3. Fry in oil. It is essential to fry smaller sized portions rather than larger ones to make sure the dough is cooked through while maintaining a beautiful caramelized color (not burnt). We recommend using a max of 1/2 of a tablespoon at a time. The batter expands during the cooking process. Add sufficient oil to prevent the beignet from sticking to the bottom (1.25 inches in depth minimum). Regardless of the vessel you are to use for frying, the oil should be at least 1 inch deep.
4. Enjoy while hot! Overtime, especially if using very sweet plantain, the beignet may slightly hardened. We prefer eating them while hot, soft on the inside and crunchy on the outside.
