Haitian Sweet Potatoes Bread

This traditional Haitian dessert is delicious and can be served as a dessert or a sweet side dish for your Thanksgiving dinner. Haitian sweet potato bread, "pain patate" or "gateau patate" is reminiscing of sweet potatoes pudding, casserole, or pie (the filling). To me, it tastes just like the perfect sweet potatoes brownie.

Haitian Sweet Potatoes Bread

Ingredients

• 2 lb of sweet potatoes (orange flesh, peeled, and cubed)
• 1/2 stick of butter (60 g or 1/4 cup softened) + 1 tbsp to butter pan
• 1 ripe banana
• 3/4 cup of sugar
• 1/2 cup of maple syrup (optional)
• 3 eggs
• 1/2 cup of evaporated milk
• 1/2 cup of coconut milk (canned)
• 1/4 tsp of ground nutmeg
• 1/2 tsp of ground cinnamon
• 1/2 tsp of vanilla extract
• 1/2 tsp of rum extract
• A pinch of salt
• A pinch of black pepper
• 1/2 cup of all-purpose flour (optional)
• 1/2 cup of maple syrup (optional)

Instructions

1. Turn on the oven and set it at 350 F. Butter a 13" x 9" baking dish (preferably a porcelain-based). You can also line the bakeware with parchment paper.
2. Add sweet potatoes to boiling water, and cook until soft (about 20 min). Make sure that top sweet potatoes are also covered by boiling water and are soft. Drain and add to a large bowl.
3. Add butter to the bowl and mash sweet potatoes with a fork until smooth. Add ripe banana and mash, and mix until smooth. Alternatively, use a food processor to mix sweet potatoes, butter, and banana.
4. Add the rest of the ingredients and incorporate until smooth, using a wooden spoon, spatula, or fork. Pour batter into the baking dish and bake for about 1 hour 15 min using the middle rack. The dessert is ready when the top is firm, and a toothpick, fork, or knife inserted at the center comes out clean.
5. Rest at room temperature for at least 15 minutes (or refrigerate for a few hours) and serve with ice cream, whipped cream, or coconut glaze. For the coconut glaze, mix powdered sugar and coconut cream until smooth. Store, sealed for up to 3 days. Warm in oven or microwave prior to serving, rest at room temp for a dozen minutes, or eat at cold.

Notes:

Adjust baking time if changing baking dish size.

Add flour for slightly more firmness. Add maple syrup for an additional layer of sweetness.

Refrigerating for a few hours prior to serving will facilitate serving, but I personally like to enjoy it warm or at room temp.
