Peach Cake

Ingredients

Peach Mix

• 3 good sized peaches (ripe but still firm)
• 1 tsp cinnamon powder
• 2 tbsp sugar

Biscuit

• 1 cup flour
• 2 tsp baking powder
• 1/4 cup sugar
• a pinch of salt
• 3/4 cup milk
• 4 tbsp of butter or 2 tbsp of coconut oil
• 1 tsp vanilla extract

Instructions

1. Turn on the oven and adjust the temperature to 375 F.
2. Peel and slice peaches and place in a small bowl. Add 2 tbsp sugar and cinnamon. Mix and set aside.
3. In a separate medium-sized bowl, add flour, salt, 1/4 cup sugar, and baking powder. Mix. Add milk and vanilla. Mix until smooth (a few small clumps are ok).
4. In a 8 X 8 inches baking pan, add your butter or oil and place in a hot oven. Let melt, it will take a few minutes. Make sure your grease covers the bottom of the pan in its entirety.
5. When the butter is slightly brown (not dark). Pour batter on pan without mixing. Spread the batter using a wooden spoon or spatula. Pour the peach mixture on top of the batter and spread uniformly.  (layers: peaches/batter/butter or oil).
6. Place in the middle rack of the oven and bake for 40 min or until the top surface is golden.
7. Serve warm. Enjoy!

How to make an easy peach cake?

Pan: This recipe calls for an 8 x 8 “ pan. Double the amounts if using a 9” x 13 “ baking pan.

Peaches: Use ripe ones. Upon mixing with spices, do not add the juice to the cake batter.

Batter: A one-bowl batter that can easily be converted into a vegan version of the recipe. Use vegan butter or coconut oil as a replacement for regular butter.
