Instructions

Make brown butter by melting then cooking on medium-low heat for about 15 min-20 min in a small pot. Stir from time to time with a wooden spoon to prevent any residue from sticking. The butter will form bubbles, turn brown and smell nutty. This is your cue. It's ready.
In a bowl, add brown sugar, granulated white sugar, and brown butter. Mix with a spoon.
Add eggs. baking powder, baking soda, and mix some more.
Add flour, salt, and mix.
Finally, add chocolate chips/chunks to the mixture and incorporate the chocolate until the dough is homogeneous.
Set oven to 350 F.
Form 12 balls, flatten a bit (or your shape of choice). Top with a few chocolate chunks or chips and refrigerate (in the fridge) for 20 min on a flat surface.
Bake for 11 min at 350 F on a parchment paper-lined baking sheet using the top rack of the oven. Keep cookie balls at least 1 inch apart. The cookie will be very soft to the touch and will harden over time while cooling at room temperature.
Store in a sealed container soon after (see note).

Notes:

Make sure the container is properly sealed. The longer your cookies remain in ambient air the harder they become.

You can shape the cookie dough in any shape you like. The baking temperature may need to be adjusted. Make sure the cookie is very soft even after baking.

Pre-shaped cookie dough can be kept in the fridge overnight. Just make sure to thaw for about half an hour.
