The Best Pumpkin Waffles (with chocolate chips)

This is an easy and fluffy pumpkin chocolate chips waffle recipe. In my opinion, it is the best pumpkin waffle recipe I have tried. It is perfect for breakfast, brunch, or as a snack. Pair it with a latte and you are golden!

The Best Pumpkin Waffles (with chocolate chips)

Ingredients

• 2 cups and 1 tbsp of flour
• 1/2 cup of sugar
• 1 tbsp of baking powder
• a pinch of salt
• 2 eggs
• 1/3 cup melted butter (or 5 tbsp)
• 1 cup milk
• 1 cup of pumpkin puree
• 1/2 tsp of vanilla extract
• 1/2 tsp of ground cinnamon
• 3/4 cup of semi-sweet chocolate chips (optional)

Instructions

1. In a medium-sized bowl, combine flour, sugar, baking powder, and salt. Briefly mix with a whisk, fork, or spoon.
2. Mix eggs, butter, milk, pumpkin purée, vanilla, and cinnamon in a separate bowl.
3. Combine flour and pumpkin mixtures and mix until homogeneous, using a spoon or fork. Do not overmix.
4. For one waffle, add half (1/4 cup), top with a tbsp of chocolate chips, and 1/4 cup of batter. Try to cover the chocolate chips with the batter so that the chocolate does not stick to the waffle iron on any of the sides. The waffle will be crispy and slightly brown on top. Do not overcook.
5. Serve warm with butter, maple syrup.
6. Enjoy!

Tips to making awesome pumpkin waffles?

1. Use quality ingredients. Some canned pumpkin purées brands have sand, use a reputable brand.

2. You can add cinnamon or nutmeg if you would like. Pumpkin also pairs well with cardamon; use cardamon sparingly.

3. Do not overmix.
